Paleo and gluten-free diet advocates Cain & Tammy Credicott are our guests today in Episode 622 of The Livin’ La Vida Low-Carb Show with Jimmy Moore!
It's always interesting to hear about how people find their way into the Paleo community and today's interview guests have quite the journey to share. In 2008, Cain Credicott was diagnosed with Celiac disease which required him to immediately begin following a strictly gluten-free diet. He and his wife Tammy became so passionate about this that they decided to open up a gluten-free bakery to help others with some form of gluten sensitivity enjoy delicious and healthy baked goods. Unfortunately for Cain, simply cutting gluten out of his diet didn't do the trick to make him better like he had hope. It was at this point that he decided to try a gluten-free vegetarian and even a gluten-free vegan diet which predictably made him get even worse. It wasn't until Cain stumbled upon information about the Paleo diet that real improvement in his Celiac disease began to happen.
In the meantime, Tammy got busy baking in the kitchen and coming up with excellent gluten-free recipes she shared in her debut cookbook that released earlier this year called The Healthy Gluten Free Life. But with her husband Cain doing more of a Paleo diet which required him to drop the gluten plus the grains and sugars, she knew she needed to incorporate these ideas into her next cookbook. And that's exactly what she did in her latest Victory Belt book release entitled Paleo Indulgences: Healthy Gluten-Free Recipes to Satisfy Your Primal Cravings. An oh, by the way, guess what Cain decided to do with his newfound love for Paleo. He created a brand new publication you may have heard of over the past year or so called PALEO Magazine.
